Did you say Kamayan?

Kamayan is the traditional Filipino way of eating — without utensils. But the word has also come to refer to a communal feast, composed of a beautiful display of various foods that is served on green banana leaves and eaten with your hands!

By integrating this practice — a common way of eating at home, but not so much in public — into pop-ups and restaurants, a new crop of Filipino chefs in North America are reviving the Kamayan feast night as a way of connecting to their ancestral roots.

It’s also a great way to introduce new people to Filipino food through an experience that’s visually pleasing enough for Instagram.

Through this communal meal setting that lends itself to togetherness, these Filipino chefs are trying to create a sense of community.

So more than just a restaurant, Junior was born out of a passion to share this rich Filipino culture with the Montreal community. In 2014, award-winning DJ brothers, Jojo and Toddy Flores, along with Dr Julian Somera and artist David Pendon, came together to make the authentic flavors and feels of the Philippines easily accessible, within the Griffintown restaurant row on Notre Dame West.

As the Flores brothers were happy to tell us: “If you weren’t already aware, everyone ‘back home’ knows a friend, uncle, or may even be named ‘Junior‘ themselves. As the ubiquitous boy’s name can be found throughout the Philippines, in a way it’s become a representation of the culture and that’s exactly why we’re here.”
