YUBARI | New Japanese Restaurant Hidden Inside Old Montreal’s Hotel St Paul

Yubari

As the streets of Old Montreal bustle with a vibrant and ever-evolving gastronomic scene, a new jewel emerges within Hotel St Paul‘s historic walls. Yubari, a Japanese restaurant which opened on March 14, is setting the stage to redefine fine dining in the city. Named after the town of Yubari in Japan’s Hokkaido island—renowned for its delectable Yubari King melons—this restaurant promises a taste of Nippon with a refined twist.

The restaurant is the brainchild of Ludovic Marionnet, Brahms Yaiche, and Massimo Caporusso, a trio of seasoned restaurateurs who have previously enriched Montreal’s culinary landscape with establishments such as Emmanuelle Lounge and Butterfly. Their latest venture is a blend of their rich experience and their passion for Japanese cuisine, influenced by their extensive travels around the world.

The menu offers a sophisticated fusion of traditional Japanese dishes with subtle touches of Asian and French flavors, aimed at creating a unique dining experience. The chefs, a cadre of culinary artisans, have curated a menu that highlights fresh ingredients, some of which are flown in directly from Japan. The offerings range from delicate sashimi and exquisite nigiri to a robust selection of starters and main courses, each dish presenting a balance of classic technique and innovative flair.

But Yubari isn’t just about food. The dining space itself is a testament to the founders’ vision of elegance and uniqueness. Designed by Italo Di Pietro of Anonymous Concepts and constructed by Rémi Rondeau, the interior features burnt wood accents, vibrant eclectic lighting, and a selection of floral arrangements and bonsai trees that contribute to a tranquil yet sophisticated atmosphere. Leopard print benches add a playful note to the otherwise serene decor, making Yubari not only a place to eat but a place to be seen.

The drink menu complements the culinary experience with an impeccable selection of sake, fine wines, and creative cocktails, ensuring that each meal is paired perfectly with both flavor and ambiance.
