Let’s be honest. That espresso martini you’ve been ordering, the one made with Kahlúa, pre-ground grocery store coffee, and whatever well vodka the bartender grabbed without looking, it’s fine. It’s perfectly fine. And “perfectly fine” is probably the most damning thing you can say about a cocktail.
I love espresso martinis, especially the ones at Best Kept MTL, but recently I discovered a better way of making them. A more direct, straight-from-the-source approach. Less diluted. Less sugary. Less disappointing. More coffee. More character. More everything you actually wanted from an espresso martini in the first place.
Enter Chambre Noire. And yes, everything changes now.
What Is Chambre Noire And Why Haven’t You Heard Of It Yet?

Admit it, your bottle of Tia Maria is suddenly embarrassing AF.
Chambre Noire is a cold-infused coffee vodka made by Maison Le Chêne, a family-owned Montreal micro-distillery run by father-son duo Simon and Sacha Le Chêne. Rather than building another flavored vodka or coffee liqueur, they created something entirely different.
The recipe is remarkably simple: Nicaraguan coffee beans, Quebec-made vodka, local maple syrup, and Quebec spring water. No artificial flavors. No coloring. No coffee extracts. No shortcuts.
The coffee comes from a single-origin family farm in Nicaragua and is cold-infused directly into the vodka through a slow maceration process. Because heat is never involved, the coffee retains its natural aroma and complexity without extracting excessive bitterness. The result is dry, aromatic, lightly caffeinated, and considerably more sophisticated than the average coffee liqueur.
Why Your Espresso Martini Has Been Letting You Down
The espresso martini industrial complex has gotten lazy.
Too many bars rely on sugary coffee liqueurs to cover mediocre spirits. Others use weak espresso shots that disappear behind sweetness. Most end up tasting more like dessert than coffee.
Chambre Noire doesn’t simply improve the espresso martini — it streamlines it. Because the coffee is already infused into the vodka, you don’t need a separate espresso shot or coffee liqueur. Shake it over ice and you’ll get a beautiful natural crema thanks to the real coffee sediment present in every bottle.
The maple syrup softens the edges without overwhelming the drink. The coffee remains the star. Every sip tastes closer to freshly roasted beans than candy-coated coffee syrup.
It’s everything espresso martinis were supposed to be before they became Instagram accessories.
Summer Discovery: Meet The Café Tonico

Special thx to Sasha’s charming dad who is 1/2 of the father-and-son business!
As much as we love a proper Noiretini, our biggest surprise this summer wasn’t the espresso martini at all. It was the Café Tonico.
During a private pairing at TITANIC this bright and refreshing cocktail instantly became our warm-weather favorite. Think crisp tonic water, fresh lemon, subtle bitterness, and aromatic coffee notes working together in perfect balance. It delivers the sophistication of an aperitif with a gentle caffeine lift that feels ideal for long afternoons on a terrasse.
We also discovered that it pairs exceptionally well with Italian paninis, grilled cheese sandwiches, charcuterie boards, and light summer lunches. The citrus and tonic cut through rich melted cheese beautifully while the coffee notes add unexpected depth. This is your brunch, poolside and rooftop side-kick Cari amici!
Café Tonico Recipe
- 30 ml Chambre Noire
- 90 ml Fever-Tree tonic water (or any tonic but this one is good!)
- 1 tsp simple syrup
- 7.5 ml fresh lemon juice ( like 10ml, so squeeze to taste!)
- Lemon zest (now you can justify a zester and show off ;)
Shake Chambre Noire, lemon juice, and simple syrup with ice. Strain into an ice-filled highball glass, top with tonic water, and finish with expressed lemon zest and a lemon wheel garnish.
Simple. Elegant. Ridiculously refreshing!
How To Actually Drink It
Here’s where Chambre Noire earns serious bonus points: versatility without compromise.
Whether you’re making a Noiretini, a Café Tonico, a Black Russian, a Noiregroni, or experimenting with your own creations, the spirit remains unmistakably itself. It can also carry a full course from apératif right down to dessert.

The Details That Matter
Priced at approximately $45 and available at the SAQ both online and in-store, Chambre Noire comfortably occupies the accessible luxury category.
The bottle looks premium, gifts well, photographs beautifully, and earns permanent shelf space rather than being hidden at the back of your liquor cabinet.
It’s currently available throughout Quebec, with expansion plans beyond the province already underway.
The Bottom Line

Nothing artificial. Not even the marketing.
Chambre Noire is what happens when a family with decades of distilling expertise decides to focus on doing one thing exceptionally well.
Four ingredients. One obsession. Zero compromises.
It’s the only cold-infused coffee vodka of its kind in Canada, a genuinely unique spirit that simplifies cocktails while elevating them at the same time.
Whether you’re an espresso martini devotee or searching for your next summer cocktail obsession in the form of a Café Tonico, Chambre Noire delivers something increasingly rare in the beverage world:
A product that actually tastes as good as its story.
