One of our top staff picks was restaurant Chez Chose. Wildly blended family of experienced restauration professionals, lovers of good food, fond of conviviality. Born with a desire to share its culinary passion that burst in the eyes of its guests right to the last bite.

Upon our entrance, the welcoming was genuinely amicable, apparent not to only us but its overall clientele having made a reservation. We quickly settled into a warm and cozy ambiance. To begin was the scallop dish in its lobster emulsion, so appetizing that we failed to take a picture prior to taking a bite. As an appetizer, a Chardonnay is always welcome: Côtes de Thongue – Chardonnay 2017.

The delectable, worthy of a starred restaurant the mushroom party put a high on our palate. The cream sauce was to die for. Chianti Colli Senesi DOCG was a superb pairing.

Next up was the scoter, served to perfection using a vacuum cooking technique. The lime sauce was so delicious we considered taking it to go all on its own! And the cauliflower purée was creamy, comforting and delicious in its own right. The wine pairing was succulent with the meat dish: Maremma, Mocali Cabernet Sauvignon.

The hearty meal didn’t stop us from partaking in their dessert selection which included a sticky toffee pudding mousse, smoked topinambour, house crumble with the excellent wine pairing: Domaine Tariquet, Premiere grives, Cotes des Cascogne 2018, a dessert wine not too sweet, with just the right complexity to complete the culinary voyage.

Overall the food and wine pairings had a regional accent from our gracious sommelier M. Jacques who was in our presence. We conversed over a glass of wine where he meticulously described his inspiring dishes adding to the overall experience.

We couldn’t have asked for more truly amazing results having a chef combine the best local produce in traditional continental preparations. The menu was unusual yet innovative with enough familiarity to appeal to a good cross-section of diners.

The restaurant review was a collaborative effort with Lucie Lebel Perron.
