SAUVAGE | Chic Mediterranean Resto in Old Montreal Turns 1
1 year ago the former location of the popular Joverse was reinvented into Sauvage, a new high-end restaurant-bar with a Mediterranean flavor. Since then this hot spot has taken the Old Montreal to new heights with its elaborate design, menu and liquor list and the largest terrace on Saint-Jacques Street.
To reinvent the magnificent space of 3,200 square feet on two floors, across the street from Hotel Place d’Armes, Montreal entrepreneur Matt Guerguerian called on the expertise of the Gauley Brothers (Bird Bar, Foiegwa, Awater Cocktail Club).
To highlight the magnificent architecture of the heritage building, a new lighting system was developed and integrated into the sound system for a unique atmosphere.
The design was conceived to create two completely different experiences on each floor. Upstairs, there is a 147-seat dining room with a raw design, textured cement walls and a majestic illuminated ceiling like you will not have seen anywhere else.
As co-designer Toby Gauley of gauleybrothers was happy to tell us: “The huge luminary that steals the show represents the fire around which humans have gathered since the beginning of time. It is made up of mirrors, a stretched vinyl fabric and LED lights, then programmed so that the ceiling adapts to the rhythm of the music and the evening.” Sauvage hosts guest DJs for special theme nights.
Downstairs, the 114-seat space nicknamed “Grotto” offers an elegant design and a cozy atmosphere.
The speakeasy-style mixology bar provides an impressive menu of 28 cocktails.
Executive chef Sary Hussein (Vallier Bistro, Restaurant di Menna) leads the kitchens. In the spotlight, Mediterranean cuisine from the market with beautiful cuts of meat, fish and fresh seafood, then grilled.
The Sauvage menu takes you to different regions of the Mediterranean for a unique taste experience; including oysters, Mezze platters to share, fresh tartars and ceviches, grilled fish, rack of lamb with tzatziki sauce and a fillet mignon with blue cheese. So everything is set to satisfy all of your savage appetites!
