With its stunning décor and the largest summer terrace on Saint-Jacques Street, Sauvage has quickly become a must-visit destination for locals and tourists alike. After a period of renovations from March 29 to November 1 of this year, Sauvage proudly reopened on November 13, unveiling a refreshed menu crafted by Executive Chef Sary Hussein.

A Space Reimagined for Elegance and Versatility
Spanning 3,200 square feet across two floors, Sauvage exudes a modern, sophisticated charm that respects the heritage of its historic location. Montreal entrepreneur Matt Guerguerian enlisted the renowned Gauley Brothers—known for their iconic work at Bird Bar, Foiegwa, and Atwater Cocktail Club—to transform the space. The result? A dynamic venue that offers two distinct experiences, each designed to dazzle.

Upstairs: A Feast for the Senses
The second floor boasts a 147-seat dining room featuring textured cement walls and a jaw-dropping illuminated ceiling. Co-designer Toby Gauley describes the centerpiece luminary as a modern homage to ancient campfires, the heart of human connection. Made with mirrors, stretched vinyl fabric, and LED lights, this captivating feature synchronizes with the evening’s music and mood. Combined with guest DJs and special theme evenings, such as Wine Down Wednesday, the upstairs atmosphere quickly becomes electric.

Downstairs: The Grotto Experience
In contrast, the downstairs “Grotto” offers an intimate retreat. With seating for 114 guests, this space features an elegant design and a speakeasy-style mixology bar. Here, patrons can indulge in an extensive cocktail menu featuring 28 expertly crafted creations, each more inventive than the last.

Executive Chef Sary Hussein (formerly of Vallier Bistro and Restaurant di Menna) leads Sauvage’s culinary vision, delivering Mediterranean market cuisine that highlights fresh, premium ingredients.
