CAVALLO | 1 Exclusive Evening of Wine and Bite in The Parlor
One of the most majestic and beloved animals in the world is the horse or cavallo in Italian. The poet Ronald Duncan wrote: “The horse. Here is nobility without conceit, friendship without envy, beauty without vanity. A willing servant, yet never a slave.”
On Tuesday, October 25, The Beauties and the Beasts will hold the first edition of Cavallo – an elegant evening of wine-tasting, hors d’oeuvres and live performances – at The Parlor for the benefit of the Galahad Refuge for lost horses.
In collaboration with Gusta Foods and Zoë Olive Oil, exquisite vegan appetizers will be prepared by three top culinary artists during a friendly “Battle of the Chefs”.
The Contending Chefs
Mathieu Masson-Duceppe. The grand winner of Chopped Canada and executive chef of Jellyfish. He is a young chef, who has travelled and cooked around the world, that has quickly carved out a place for himself among the Greats of our province. His bites will be served with the Trois Moineaux artisanal wines created and chosen by Louis Dugas and Francis Lorrains, 2 of the 3 ‘’moineaux’’.
Nick De Palma. A colourful chef who knows how to draw crowds with the simplicity of his dishes full of character. Former head of the famous Italian restaurant Inferno, he is the director of the reputed Fiorella and owner of the legendary San Simeon café. His small gastronomic pleasures will be accompanied by the choices of sommelier Jordan Thesserault of the Vignôme wine agency.
Mathieu Perreault Jesserey. Chef and co-owner of Le Coup Monté restaurants and formerly at l’Épicier. He is a passionate cook who wants to promote local products and artisans and who likes to create unifying gastronomic events. Who better than David Francis from DF Wines and VinoQueb to complete his food and wine pairing.
But wait, you’ll have to choose a winning chef and if you identify the winner, you’ll get the chance to win a gift certificate to his restaurant!
In a velvety atmosphere, with music by DJ Sin and live performances by the magnificent Lena Nimenson, aka Little Galaxia, circus artist, dancer and model from Buenos Aires.
The event’s location was carefully selected. The first edition of Cavallo will be held in one of the most exclusive places in the city, The Parlor – Private Cellars. It was named the best private wine club in Eastern Canada in 2021 by the LUXLife Food & Drink Awards.
You’ll also be able to put your hands on unique works of equestrian art by local artists during an auction. All the profits of the evening – which are expected to reach $20 000! – will be donated to the Galahad Refuge, whose mission is to help relocate horses of owners who can no longer bear their costs as well as neglected or abandoned horses. What better cause to pair with a classy cocktail party!

About The Beauties and the Beasts
Founded by philanthropist Kim Bruneau, the mission of The Beauties and the Beasts Foundation is simply to help as many animal welfare organizations as possible through various charitable activities. Throughout the year they organize original events, like Cavallo, in collaboration with different partners to raise funds for selected animal welfare organizations, such as the Galahad Refuge. In a distant future, they would like to open a sanctuary for domestic, wild and farm animals in Boucherville in collaboration with the Passion Compassion veterinary hospital.
