As a chip lover I had reluctantly placed on pause my chippy snack ideas until Xmas but with my helpful friend Google, I have discovered, the world of low carb chips! (Other chip recipes to follow).

So here we are at day 4 and I actually feel slimmer.

I have decided on this journey I will not put myself through the emotional roller coaster of daily or even weekly measuring and weighing or putting on “goal jeans.”

I am just going to follow:

-150 carbs a day  Oct
-50-100 carbs max November
-0-50 December and see what the AFTER photo looks like On Dec 24th at midnight!

Recently, I got invited to a dinner party. Those unlike restos where YOU control what is going from the menu to your mouth, provide a huge opportunity to set you back. I not only declined the invitation (there will be dinner parties in the future) I let my key friends know I can’t attend dinners until Dec 26th– problem solved. One of my friends said that we can have fun making a low carb dinner at my place, and we can- but I do not expect everyone to have to change their lifestyle for me- this is MY journey and challenge and I am o.k with that. So today’s lesson is:

Do not feel bad at declining dinner parties. No one has a dinner party with salads, a moderate amount of vino and no desserts! Dinner parties are high caloric celebrations that last for hours…

They run you about 5,000 calories on average. There is a reason, everyone is too full to leave and everyone is waiting for the 1st person to get off their lazy carb coma liquored ass and call an uber! Don’t get me wrong, I love dinner parties but to  someone trying to lose weight they are a sure way to gain weight overnight with a bonus day & night of being too tired to be healthy the next day and likely order out or eat easy processed foods.

So here we are with a simple cheese chip recipe and a sunny day ahead. Thanks for joining!

1 INGREDIENT 3 Step CHEESE CHIPS Thanks to Simple Stacie

1 1/2 cups of shredded cheese (Mexican bag is best!)
1-Preheat oven to 375F. Lay a piece of parchment paper on two baking sheets.
2-Add cheese to baking sheet, about 1 tablespoon per chip. Make sure to leave enough room in between them so they aren’t touching.
3-Bake for 5 to 7 minutes, or until starting to crisp. Remove from heat and let cool about 5 to 10 minutes. Carefully remove from baking sheet and serve with your favourite dip. I like them with pizza sauce.
